Coconut milk is a thicker substance which will make a nice and thick shake. If you like your ice cream sweet, choose a milk that has more of a sweet taste. Coconut milk will give a coconut flavor and almond milk will give an almond flavor to the ice cream. Cream substitutes
To reduce the lactose even further, the cream used will also need to be substituted. Most ice cream is made of approximately 25 to 66 percent of cow’s milk. The balance consists of cream, fruit and other various ingredients. To substitute the cream, there are several options available. Non-dairy whipped topping is a great product to switch the cream with. Not only is it thick and rich but it will add a lot of flavor, texture and volume to your ice cream.
There is generally about 6 grams of lactose in a half cup of ice cream. This is about half the amount that is found in approximately 8 ounces of reduced fat cow’s milk. It is possible to make ice cream lactose free; however, consuming lactose in small amounts during each meal will help to reduce the intolerance a sufferer may have and without any symptoms.
